Post-work out fish taco bowl

Getting the right amount of protein in your diet is hugely important, especially if you're hitting the gym and training hard. Whether you're trying to reach your macros or find yourself wanting something healthy, filling and pretty tasty after you've worked out, these taco bowls from fitness enthusiast Sammy from Sammy's Kitchen are the perfect post-exercise dish.

Ingredients

For the fish

  • 2 fillets of cod
  • 1/4 tsp cumin
  • 1/4 tsp smoked paprika
  • 2 tsp honey
  • Squeeze of lime

For the beans

  • 1 small onion
  • 400g tin black beans
  • 1 clove garlic
  • 1/4 tsp chipotle paste
  • 1/4 tsp cumin
  • Juice of half a lime
  • Handful of coriander

For the taco sauce

  • 1 tsp mayo
  • Chipotle paste to taste
  • Small squeeze of honey
  • Squeeze of lime

For the guacamole

  • 1/2 small red onion
  • 4 cherry tomatoes
  • 1 large, ripe avocado
  • Juice of half a lime
  • Chilli flakes to taste
  • Handful of coriander

Method

  1. Pre-heat the oven to 180°C (fan). Place the fish on a lined baking tray and paste your mixed marinade ingredients on top. Cook for 20 minutes.
  2. For the beans, finely chop the onion and garlic. Add to a saucepan with a few sprays of Frylight garlic oil. Saute for a couple of minutes until they begin to soften.
  3. Drain the beans and add to the pan, along with the other ingredients (except the coriander). Mash them with the back of a fork and add a splash of water if needed. Once softened (this may take about 10 minutes), chop the coriander and pop it in the mix. Season with lots of salt and pepper to taste.
  4. For the taco sauce, mix all the ingredients together. Try it as you go along, adding more chipotle for heat, lime for a zing or honey for sweetness.
  5. Make the guacamole last to avoid browning! Dice the onion and tomato. Add the avocado to the bowl and give it a mash. Add the lime and chilli flakes, then season with salt and pepper to taste. Sprinkle on some chopped coriander.
  6. Layer up your taco bowl with spinach, veg and rice before adding the fish, beans, guacamole and taco sauce. If you're prepping ahead, put the guacamole, beans, fish and taco sauce into a triple or double container Igluu meal prep container to keep everything separate.
