#PancakeDay recipes that won't ruin your health kick

If you're committed to eating clean, getting the perfect balance of macros or just don't want to ruin your hard work with a plate of batter and sugar, Pancake Day can be a bit of a nightmare.

Thankfully, pancake recipes have levelled up and it's now really easy to make your own healthy treats that won't throw off your LifeSum rating.

The low-cal option

If you're cutting or counting calories, this could be the perfect pancake for you. Pop your flour into a bowl, add a beaten egg, the milk and oil and stir until you have a smooth batter. Leave to stand for 20 minutes then spoon into a pan - simple!

Ingredients

  • 125g/4½oz wholemeal plain flour
  • 1 free-range egg
  • 300ml/½ pint skimmed milk
  • 1 tsp olive oil
  • low-calorie cooking spray
  • Mixed berries (strawberries, raspberries, blueberries)
  • 4 tbsp low-fat yoghurt

The vegan option

Being vegan has never been so easy, so why not ditch the eggs and dairy for a lighter, healthier vegan pancake that's just as delicious! Sift the plain flower and chickpea flour with a pinch of salt into a bowl, then add the plant milk into a well in the centre. You know the rest!

Ingredients

  • 4 oz (115g) plain flour
  • 1 tsp chickpea flour
  • Salt
  • Vegetable oil
  • 1/2 pint (285ml) plant or nut milk
  • Optional: free-from chocolate chips, nut butter, fruit curd

The protein-packed option

Although your typical pancakes are undeniably delicious, they have very little nutritional value. If you're hitting the gym hard and getting in your macros, this recipes is free from added sugar and packed with protein to repair your muscles and bust those cravings. If every day is Pancake Day at your house, these protein pancakes are the perfect breakfast - make them ahead and store in an Igluu container so you can grab and go.

Blitz the oats in a blender, then add the protein powder, baking powder, egg, milk and cinnamon and give it all a blitz! A quarter of the mix should make one pancake!

  • 25g whey protein powder (we recommend vanilla!)
  • 100ml milk
  • 1 large egg
  • 50g porridge oats
  • 1 tsp cinnamon
  • 1/4 tsp baking powder
  • Light cooking spray

The gluten free option

It's really easy to make GF pancakes, in fact you can probably adapt all the recipes above to cater to a GF diet - just by swapping our plain flour with gluten free flour! Mix your batter as you would with any pancake for a GF treat and voila!

  • 125g gluten free plain flour
  • 1 egg
  • 250ml milk
  • Butter for frying
